BANANA, COCONUT & OAT BREAD

INGREDIENTS

  • 2 bananas, mashed

  • 120g Nature's Lane coconut oil, melted

  • 1/2 cup Nature's Lane coconut sugar

  • 3 eggs

  • 1/2 cup rolled oats

  • 1/2 cup Nature's Lane shredded coconut

  • 1 1/4 cup unbleached plain flour

  • 1/2 teaspoon baking powder

  • 2 teaspoon cinnamon

  • 1/4 teaspoon Nature's Lane himalayan salt

  • 1/4 cup coconut milk

  • 1/2 teaspoon baking soda


METHOD

  1. Preheat oven to 160°C. Grease and line a loaf tin with baking paper.

  2. In a large bowl combine melted butter and sugar. Whisk in eggs, vanilla and mashed banana.

  3. In a seperate bowl, add the milk and baking soda. Stir until baking soda has dissolved. Add banana mixture and gently stir and fold.

  4. Combine oats, coconut, flour, baking powder and cinnamon and salt. In the centre create a well, pour in banana mixture. Gently fold together until combined.

  5. Pour into loaf tin. Sprinkle with oats and shredding coconut. Bake for 1 hour or until skewer comes out clean.

  6. Cool on wire rack before slicing.
