COCONUT FLOUR BANANA BREAD

INGREDIENTS

  • 3 eggs

  • 100ml maple syrup

  • 125ml (1/2 cup) vegetable oil

  • 1 tsp vanilla extract

  • 1 1/2 cups (3 medium) over-ripe bananas, mashed

  • 1 1/2 cups Nature's Lane coconut flour

  • 1 tsp bicarbonate of soda

  • 1 1/2 tsp baking powder


METHOD

  1. Preheat oven to 180C/160C fan-forced. Grease and line the base and sides of a loaf pan with baking paper.

  2. Whisk the eggs, syrup and oil together in a medium bowl until combined. Add the vanilla and banana and stir to combine.

  3. Combine the flour, bicarbonate of soda and baking powder in a large bowl. Make a well in the centre. Add the banana mixture and stir to combine. Spread mixture into prepared pan. Smooth top.

  4. Bake for 40-45 minutes or until a skewer inserted into the centre comes out clean. Cool in pan for 10 minutes before transferring to a wire rack to cool completely.
